Miles of Maple is a new 2025 organic maple syrup business started by Dale Herrington, his wife Amy and their son Miles (hence “Miles” of Maple).
Dale and family started tapping trees in New Hampshire for fun in 2024 with 40 blue buckets hanging off of maple trees.
Dale went all in this year, starting a serious business venture. Dale’s focus is on producing the highest quality, small batch pure organic maple syrup, sourced 100% from trees he has tapped in NH.
He now has 2,600 maple trees tapped in the Seacoast NH area. If you are in the area, you might see some of the blue tubing peeking from the maple forests, plus sap bags on some of the smaller lots. Dale’s invested in the latest technology with vacuum pumps, reverse osmosis and a propane fired evaporator in his sugar shack. Every day during syrup season, you will find Dale in his sugar shack, with the warm scent of maple drifting on the breeze.

This Cookie Recipe is a new family's favorite. The maple icing tops off a moist and delicious cookie.
Great recipe for Maple Glazed Walnuts. One suggestion, heat the maple syrup to 234 degrees before adding to the pan with the other ingredients. This seems to allow the maple shell to be crispy rather than sticky.
